Ingredients

- 1 ripe banana, mashed
- 1 cup rolled oats
- 2 tablespoons chia seeds
- ¼ cup peanut butter (or almond butter)
- 2 tablespoons honey or maple syrup
- ½ teaspoon vanilla extract
- ¼ teaspoon cinnamon
- ¼ cup shredded coconut (optional)
- ¼ cup mini chocolate chips (optional)
Instructions
- In a bowl, mash the banana until smooth.
- Add oats, chia seeds, peanut butter, honey, vanilla extract, and cinnamon. Stir to combine.
- If using, fold in shredded coconut and mini chocolate chips.
- Chill the mixture in the fridge for 20 minutes to firm up.
