But before we dive into the recipe, let’s talk a little more about this wonderful root vegetable. Purple sweet potatoes are a great alternative to classic white potatoes and orange sweet potatoes. They have a bright violet flesh thanks to the high concentration of so-called violet pigments anthocyaninsAlso powerful antioxidants.
Purple sweet potatoes are slightly drier and denser than other potatoes and taste slightly sweet, floral and nutty. Finding purple sweet potatoes locally is a bit more difficult compared to their orange counterpart. Specialty stores and Asian grocery stores should usually stock them, especially in the fall when they’re in season. Alternatively, you can buy a crate online.
There are two varieties of purple yams: Okinawa and Stokes. While both species have a deep purple flesh, Okinawan purple yams have a lighter, almost whitish skin, while Stokes potatoes have a more classic brownish skin. If you go to your local market, make sure you don’t confuse them with the red-skinned yams, which are white on the inside, not purple.
Now that you know the ins and outs of purple sweet potatoes, let’s turn them into super crunchy chips. The key to making homemade chips is to slice the potatoes as thinly as possible. Remember, the thinner, the crunchier! A mandoline slicer with a blade setting of 1-2 mm will give you perfect results.
