Many years ago I lived in a townhouse community. Whenever it snowed, everyone in my little corner of the world would come out with their shovels and clean sidewalks, cars, parking lots, and even the street itself. Those unable to shovel due to recent illness or pregnancy stayed inside , baked muffins and served them to the shovel workers with coffee and hot chocolate.
I made this recipe during the first snowstorm of the year and it reminded me of those days. Served hot, with a perfect muffin-like crust and coffee, I was almost glad to be out with my snow shovel. Nearly. I’m forty years older now and I understand the appeal of Florida in winter.
The only downside to this cornbread was that it was a bit too sweet for me. It’s just a matter of taste and I know the sugar contributes to the crispy edges, but next time I make it I might play around with the sugary ingredients. Otherwise it is a successful dish for snowy days.
I used a 12″ square baking pan and got about 36 slices. Shoveling can whet a little appetite.
