Green Goddess Dressing first originated in San Francisco in the 1920s as an homage to a play called The Green Goddess by George Arliss and as a variation on a green herb sauce called “sauce au vert” (green sauce) made by a Louis XIII chef. Designed in France. Its ingredients were typically mayonnaise, sour cream, chives, chervil, tarragon, anchovies, lemon juice, and pepper.

However, there have been many variations over the years. For example, this Avocado Green Goddess Dressing recipe not only features avocado as the main ingredient, but it’s also 100% vegan!

  • Avocado: Use a good quality, ripe to overripe avocado. If it’s too ripe, it can have a slightly bitter taste and won’t blend smoothly.
  • Fresh herbs: This creamy avocado dressing is an incredibly flavorful herb dressing made with Italian parsley, chives, mint and basil. However, you can also use tarragon (only 1-2 tbsp as it has a strong liquorice-like flavor), green onions or coriander.
  • Garlic: Fresh garlic works best. For a different flavor profile, try roasted garlic and increase the amount to taste (since it’s a lot softer).
  • Acid ingredients: We use a combination of fresh lime (or lemon) juice and apple cider vinegar or white wine vinegar for depth of flavor.
  • Sweetener: It is best to use a liquid sweetener such as maple syrup or agave. If you prefer, you can use a sugar-free version.
  • Salt: Season to taste. Use soy sauce/coconut aminos for a more umami-rich salty element. Optionally, you can also add a pinch of black pepper.
  • Water: To bring the green avocado sauce to the right consistency. Alternatively, combine or substitute with plain vegan yogurt, tahini or cashew cream for a creamier vegan green avocado dressing.

  • Without food processor: Although it is possible, you must manually crush the garlic and finely chop the herbs. The dip won’t be as smooth or vibrant, but it will work.

Storage Instructions

Unfortunately, like most avocado recipes, this green avocado dressing doesn’t store very well as the avocado oxidizes and turns brown fairly quickly. For this reason, We recommend consuming it on the same day.

However, to make it last longer, pour a small layer of olive oil or lemon juice over the top of the dressing (to create a seal), cover with a layer of plastic wrap, then add a lid and Store in the fridge for 3-4 days.

You can also freeze it. Place 1-2 tablespoon portions in an ice cube tray (optionally covered with a thin layer of olive oil) and freeze until set, then place cubes in a ziplock/stasher bag for storage between uses 3-4 months.
