A quick and easy lunch idea for kids; Pizza toast prepared in the Airfryer with three hidden vegetables

I’ve been making cheat pizza recipes for years; Tortilla Pizzas, Pizza Bagels and of course Pizza Toast.
Since I bought an Airfryer, I’ve made these even more often. There’s something about throwing it in the Airfryer that just feels a little quicker and easier!
This version of Airfryer Pizza Toast is just as quick and easy, and it also includes three hidden veggies to mix into the sauce.

The first step is to toast the bread in the Airfryer. Spray with some oil and fry for 2 minutes on both sides.
This gives a nice crunchy base for the pizza toppings and prevents the bread from getting soggy.

Next, prepare the vegetables. Finely grate the carrot and zucchini and cut the peppers into small pieces.

Mix the vegetables with some pasta or pizza sauce.
You could also use canned chopped tomatoes, but I like to use pasta or pizza sauce as it’s already flavored with herbs and also a bit thicker.

Spread the sauce and vegetables on the toasted bread and sprinkle with grated cheese.
Cook for 8 minutes or until cheese is melted and golden brown.

Once cooked, you don’t even see the vegetables anymore. They are fully mixed with the sauce and then covered with the melted cheese.
Great for picky kids!

Cut into squares or triangles.
You can add some fresh basil leaves for some extra flavor if you think your kids would like them.

Serve immediately with some chopped fruits and veggies for a healthy, kid-friendly lunch that’s super quick and easy.

Airfryer Pizza Toast with hidden vegetables

Ingredients
- 2 cuts bread
- spray oil
- ½ carrot
- ¼ zucchini
- ¼ Red pepper
- 60g pasta or pizza sauce
- 40g grated cheese
instructions
- Place the slices of bread in the Airfryer and spray both sides with spray oil.
- Bake at 180°C for 2 minutes on both sides.
- In the meantime, grate the carrot and zucchini and cut the pepper into small pieces.
- Mix the vegetables with the pasta sauce and then divide this mixture between the two slices of toasted bread.
- Put the grated cheese on top.
- Cook for 8 minutes until cheese is melted and browned.
- Cut the pizza toast into four triangles and serve immediately with fruit and vegetables.
