I’ve tried this recipe with different spices, including garam masala and an Indian-inspired spice of turmeric. They were all delicious, but in the end my favorite was just the oregano, salt, freshly ground black pepper and extra virgin olive oil.

Cut the cauliflower into medium-large pieces for the air fryer. Once you remove the stem, the cauliflower should break apart easily. Cut each large flower in half. If you make the flowers too small, you will need to reduce the air-frying time.
Cauliflower stalks are perfectly edible, and you can use the tender stalks in this recipe with great results. Save tough stems and cauliflower leaves for vegetable stock.
