Appetizer Board Components
When I make an appetizer platter, I always start with that seasonal vegetables. Radishes are my top pick for spring because they come in so many bright colors and their crunchy texture makes them ideal for dipping. Blanched sugar snap peas and asparagus pair well this time of year, as do carrots. Here I use pickled carrots. They add a bright flavor to this fresh spring board!
I love serving a creamy dip alongside all those crunchy veggies. My whipped feta is one of my favorites for spring. Its rich, tangy flavor pairs well with the fresh side dishes I like to use this time of year, like herbs and lemon zest.
In addition to vegetables for dipping, I like to add something starchy. Sliced baguette is pictured here, but crackers and crostini are also good choices.
And finally, since it’s spring I love to add hard boiled eggs! I think they make this record look so festive.
Tips for preparation: Prepare the pickled carrots up to a week in advance (they only get better flavor the longer they’re in the fridge!). You can also cook the hard boiled eggs and the whipped feta up to 3 days ahead.
