Welsh cakes are a British tea-time favorite and today we’re showing you how to make them vegan and sugar-free, using just applesauce and raisins. We’re sure you’ll love their soft, chewy texture and irresistible fruity flavor—and they’re so easy to make, too!
Welsh cakes originated in Wales in the United Kingdom, where they are also known as ‘picau ar y maen’, which means ‘cake on the stone’ in Welsh. They’re a cross between a small pancake, a scone, and a thick cookie. Raisins, cinnamon, and nutmeg are usually added to the batter to add a sweet and tangy twist to these delicious treats.
Staples such as flour, sugar, eggs and butter are the main ingredients in the preparation of Welsh cakes. They are combined into a pliable dough, similar to pastry dough, then cut into thick circles and finally cooked until slightly puffed.
As classic Welsh cakes contain dairy, eggs and sometimes even lard, they are unsuitable for those with food allergies or on a plant-based diet. With a few simple changes, we made our Welsh cake recipe vegan, dairy free and egg free. We swapped butter for applesauce, eggs for oil, and cow’s milk for oat milk. We also left out the sugar and used more raisins instead.
Rather than being baked, classic Welsh cakes are usually prepared on a shallow cast-iron griddle or bakestone, hence the common name “Griddle cake”. But don’t worry if you don’t have one; Your trusty frying pan works perfectly. Grease the pan with a little vegetable oil and bake the cakes like pancakes. Simply!
