Classic preserves rely on sugar to sweeten, thicken, and preserve the jam. This is at the expense of health, because a few spoonfuls of jelly can easily cover half of the daily sugar requirement. In our recipe we used ripe mangoes for the sweetness and apples for the thickness. are ripe mangoes naturally sweet, so you don’t have to add sugar to the jam. However, this fruit is low in pectin, which means the jam won’t set well without added pectin. No problem! A humble apple will do the job just fine. Apples are rich in pectin. So if you boil them and mix them with mango, you get one thick and shiny preserve with very little effort.
We love this jam recipe because it lasts only 30 minutes to make, pot to glass. Once ready, you can enjoy straight away or follow our instructions for bottling in sterilized jars.
