Whenever we long for one hearty yet healthy Meal, soups are our first choice. Legumes, vegetables and warming spices come together in a wholesome dish that nourishes us from the inside out. So today we want to share with you this creamy red lentil soup recipe inspired by traditional Lebanese cuisine sherbet adas.
Also known as shurbat al-adas or shorbat al-adas, this lentil soup is a staple in Lebanon. It consists of dried red lentils stewed with garlic, onions and vegetables such as carrots, tomatoes or potatoes. The soup is seasoned with earthy spices like cumin, cinnamon and turmeric, while a squeeze of lemon juice adds a special touch to the dish sparkling finish.
You can puree the soup into a creamy velouté, or leave it if you prefer a chunkier consistency. We love ours thick and velvety, just like they do in our favorite Lebanese restaurant. Before serving, you can garnish the soup with a dollop of vegan yoghurt and freshly chopped coriander – a real treat!
You can pair this lentil soup with whole wheat flatbread and a side salad for a filling and balanced meal. Check out our Lebanese Potato Salad, Tangerine Rainbow Salad or Barley Tabbouleh recipes if you need inspiration.
We love this recipe because of the bowl of soup that comes in only 125 calories and covers 30% RDI of fibers. Fiber is great because it is what makes you who you are full and satisfied for longer, keep your blood sugar under control and support a healthy gut. In addition, red lentils provide a source of vegetable proteins and have very little fat.
This colorful Middle Eastern soup is about as delicious and healthy as it gets, and it’s ready only 30 minutes. So why not make a big pot for the whole family? You can even pack any leftovers in the freezer, perfect for making a weeknight dinner.
