Have you ever baked sfouf? Boy Boy. You get a reward! Sfouf is a Lebanese cake made with semolina and turmeric. What we’re doing here is showing you how to turn this classic Levantine treat into both vegan and sugar free while retaining all its delicious virtues.
We were blown away by how good Sfouf tasted. We use semolina a lot in our cooking, but more so in bread baking than in sweet casseroles. The combination of semolina, turmeric and our selected herbal ingredients delivers incredibly airy and fluffy Cake, with such a warm orange color and a delicate and pleasant taste.
If you’ve eaten Lebanese sfouf before, you might recall that the classic recipe isn’t vegan, as it contains eggs, milk, and sometimes gee or butter. However, we took a different approach and, as with all of our other recipes, strived to remove as many allergens as possible. And so we made our sfouf completely vegan without using eggs or dairy; only healthy plant-based ingredients.
In addition, like most other classic baked goods around the world, sfouf contains a generous dose of white sugar. We have been eating sugar-free for almost two decades. In fact, out of nearly 400 recipes on Foodaciously today, we’ve only used white sugar once or twice! That’s why we made our sfouf without a single grain of refined sugar. Instead, we’ve opted for maple syrup, a healthier and tastier alternative that’s also suitable for vegans.
We also loved experimenting with different toppings for our cake. We tried pine nuts, crushed pistachios and sesame seeds. All excellent choices if you want to pick one! We ended up using sesame seeds because they’re the cheapest of the three, and we loved their subtle contribution to the overall flavor profile of the recipe.
Overall, sfouf has become one of our favorite cakes because it’s both delicious and very easy to make. We’ve worked hard to make it as healthy as possible and we think you’ll appreciate the results. A large portion will yield only 153 calories, 3.5 grams of sugar (not refined) and less than 5 grams of fat. Beautiful or? So go ahead, enjoy your baking and share with your loved ones!
