For today’s recipe, we want to show you how to make delicious Zucchini Corn Fritters without eggs and milk. And to keep the recipe even healthier, we baked them in the oven instead of frying them. They are crispy on the outside and soft on the insidepacked with colorful vegetables – so delicious!
Corn fritters are very popular in the United States, especially in the southern states. They consist of a dough made from corn kernels, eggs, flour and milk.
They are shaped like meatballs and then deep fried or shallow fried. Unfortunately, classic donuts aren’t vegan, and since they’re fried, they’re relatively high in fat.
Corn pies rely on the binding and leavening action of eggs because they contain no yeast or baking powder. Eggs also add flavor and richness to the dough.
So, to make our donuts egg-free, we used a combination of the following ingredients: chickpea flour for color and texture, nutritional yeast for protein and vitamins, olive oil for richness, and flaxseed for binding. It worked perfectly!
Then we added shredded zucchini, chilies and shallots to the patty batter, plus dill for a grassy and fresh touch.
To ensure the donuts get nice and crispy and not mushy, be sure to remove excess water from the zucchini and corn.
To do this, pat the grated courgettes dry with kitchen paper and allow the canned corn to drain well before you mix everything together.
Finally, all you have to do is spoon the donut batter onto a baking sheet and bake the patties for 20 minutes.
Alternatively, you can cook them in an air fryer, but you’ll need to do this in a few rounds as they probably won’t fit in the air fryer basket all at once. We made hash browns with the air fryer and they were incredibly crispy!
So a serving of 4 zucchini fritters is only 200 calories only 50 calories per patty. It also offers almost 10 grams of proteins And 20% RDI of fibersPlus healthy unsaturated fats made from olive oil and flaxseed.
So make a large batch of these healthy donuts and pack any leftovers for lunch the next day. They’re also great to take to a picnic or party – everyone will love them!
