Add a delicious tropical touch to your sweet creations with our passion fruit quark. We made it Vegan, low in fat and without refined sugarmeaning you can use it in your recipes without loading them with too many fats and sugars.
It’s quick and easy to make – only 4 ingredients necessary!
For this vegan quark, we mixed plant-based milk with starch and maple syrup, thickened it over the stove and then stirred in passion fruit juice.
The result is a soft, smooth and shiny yellow pudding with wonderful tropical notes – a real treat!
Fruit curd is usually made with citrus fruits like lemon or orange, but some variations use mango, raspberry, and passion fruit.
Unfortunately, classic quark is not vegan and has a fairly high fat and sugar content. The basic ingredients are egg yolk, white sugar, fruit juice, peel and butter.
But thanks to our recipe, you now have a healthy, plant-based alternative to try that’s as delicious as the classic!
What we did in this recipe was substitute starch for the eggs for the thickness and white refined sugar for maple syrup for the sweetness.
For our previous vegan lemon curd, we also used some coconut oil instead of butter, but here we didn’t add any fat at all. Still, we felt like we didn’t compromise on taste and texture at all.
Plant-based milks like coconut milk or oat milk contain a small amount of fats, which when combined with starch are enough to make the curd rich, shiny, and creamy.
As for the passion fruit, we will show you how to extract the juice from the passion fruit. All you need is a colander or nut bag and some patience.
But if you’re short on time or can’t find fresh passion fruit, you can also opt for store-bought juice, possibly with no added sugar or preservatives.
This vegan passion fruit quark is perfect as a spread on toast, scones or muffins, but you can also use it to fill layered cakes, biscuits, cheesecakes and tarts.
We especially love it in our passion fruit bars or with yoghurt and homemade granola for a fruity breakfast!
After all, a 30g serving has only 30 calories, a third the sugar and a quarter the fats than a classic non-vegan cottage cheese. Great!
NOTE: The standard ingredients make about 400g of passion fruit quark, enough to fill a large jar.
