Every year when March finally arrives, not only do I look forward to not only celebrating St. Patrick’s Day and stuffing my face with corned beef and cabbage, but I also always look forward to pouring myself a mint green shake to treat a certain fast food chain.
More specifically, A Shamrock Shake.
Well, I’m happy to say that there’s no need to wait in the drive-thru queue to get a shamrock shake because I found an even better recipe And can be easily prepared and drunk at home. In this recipe, chocolate cream filled cookie crumbs are mixed with vanilla ice cream, milk, mint, and vanilla extract (and green food coloring if you like) into a thick and delicious shake. Who could resist that?
For anyone who hasn’t skipped cookies, sweets or ice cream during Lent, these shakes are just the thing for you! For those who gave up those treats, hang in there! You’re almost there!
To make these Cookies and Cream Shamrock Shakes you will need:
- Chocolate Sandwich Cookies – Like Oreos or similar brand of choice.
- Spearmint Extract – Gives these shakes that distinct mint flavor. I like Simply Organic Mint Extract.
- vanilla extract – Enhances the flavors in the shake.
- green food coloring – This is optional but gives the shake its signature green color.
- milk – Use milk of your choice. I prefer whole milk or 2%.
- Vanilla Ice Cream – Use real cream, full fat ice cream. (more on that below)
Set the ice out on the counter 15-20 minutes before preparing the shakes. Meanwhile, place 12 chocolate chip cookies in a food processor.
Close the lid and mix until they are a fine crumb.
In your blender, combine 1 teaspoon mint extract, a dash of vanilla extract, and 3/4 teaspoon green food coloring. You don’t have to add the food coloring if you don’t want to. I don’t normally use food coloring in baking (unless it’s red or black velvet). But like these, these are a special occasion, so an exception to my rule.
Pour in 1/2 cup milk.
Add 4 cups (or 32 ounces or 2 pints) of vanilla ice cream.
What type of ice cream is best for shakes?
It is best to use real full-cream and full-fat ice cream. It holds up when mixed with other ingredients because it’s thicker, richer, and more aerated, resulting in a tastier, richer, and more decadent shake.
What are brands of full fat ice cream?
Use brands like Häagan Daz, Hudsonville, Private Selection (Kroger). Always read the labels to know you’re getting quality ice cream.
Can non-dairy ice cream be substituted?
I have yet to test this recipe with non-dairy alternatives. But if you try it, I’d love to hear how it worked for you!
Close the lid and blend until combined and creamy.
Finally add all the cookie crumbs.

Believe me when I say I could have EASILY ended it and walked away with the pitcher and a straw.
Pour the luxurious cookies and cream shamrock shake into glasses, top with whipped cream and add a cherry!

- 12 Chocolate Sandwich Cookies, plus more for serving if desired
- 1 teaspoon mint extract
- 3/4 teaspoon green food coloring
- 1 syringes vanilla extract
- 1/2 Cup milk
- 32 ounces Vanilla Ice Cream, (or 2 pints) Use a quality, high-fat ice cream
- whipped cream, for serving, optional
- Maraschino cherries, for serving, optional

Place the ice cream on the counter 15 to 20 minutes before preparation. Meanwhile, place the chocolate chip cookies in the bowl of your food processor and puree until they resemble small crumbs.

In a blender, combine extracts, food coloring, milk and ice cream. Mix until smooth.

Add the cookie crumbs and pulse to combine.

Pour into glasses and serve with whipped cream and a cherry on top.
