Vanilla Ice Cream + Champagne = 🥂
Spend a cozy night with friends or a loved one? Why not make it extra celebratory by toasting with champagne glasses at midnight?
It’s as simple as adding small scoops of ice cream to glasses, adding pomegranate seeds (or raspberries) and topping off with your choice of sparkling wine.
What kind of sparkling wine is best for swimmers?
Any sparkling wine will do. Use champagne, prosecco or cava! And for those who don’t drink alcohol, use sparkling grape juice.
To make these champagne floats you will need:
- Vanilla Ice Cream – Homemade or store bought, use your favorite.
- pomegranate seeds – Or use raspberries or fruit of your choice.
- sparkling wine – Can use champagne, prosecco or cava.
Fill champagne flutes with a few scoops of vanilla ice cream.
Throw in some pomegranate seeds — you could do raspberries, too.
Top with champagne – or in this case cava.

Yield: 6 glasses
Champagne floats
- 18 tablespoons (small balls) Vanilla Ice Cream
- pomegranate seeds, or raspberries
- 1 Bottle sparkling wine, such as champagne, prosecco or cava.

Place 2 to 3 small tablespoons of vanilla ice cream in champagne flutes. Garnish with pomegranate seeds or raspberries.

Top up with sparkling wine. Pour slowly as it will bubble. Add more champagne as the bubble subsides.
