Caprese Scrambled Egg Sandwich – fantastic food

This scrambled egg sandwich recipe combines three of my favorite things: caprese salad, eggs, and sandwiches! Soft scrambled eggs and mozzarella cheese pair beautifully with light tomato slices and fresh herb basil.

It’s quick and easy to make: a perfect healthy breakfast recipe for any day of the week!

When you’re in the mood for a hearty breakfast, this easy Creamy Scrambled Egg Breakfast Sandwich is a perfect choice! It’s packed with flavor and super satisfying, yet only takes 10 minutes to whip up.

You can use any bread you like here, and you can boil the eggs however you like if you don’t feel the scrambled eggs (fried, boiled, etc.).

What you need for this Caprese Scrambled Egg Sandwich:

  • eggs
  • sandwich bread (I love shoddy whole wheat bread, but you can use any type of bread you like! English muffins will work, too.)
  • tomato
  • fresh mozzarella
  • fresh basil
  • spinach (Arugula works too!)

How to make a scrambled egg sandwich

Start by slicing the mozzarella and tomato.

Next, scramble the eggs in a bowl or measuring cup, then pour them into a skillet drizzled with olive oil over medium-high heat.

Slowly cook the eggs, stirring occasionally, until cooked through but still soft. Using a spatula, fold them into a square (to fit inside the sandwich).

Next, assemble the sandwich!

Place the spinach on a piece of bread, then add the eggs. Next comes the tomato slices, mozzarella and fresh basil, then top it off with another piece of bread.

Have fun at last! Feel free to toast the bread before assembling the sandwich if you want it crispy.

What kind of mozzarella should I use?

For this egg sandwich recipe, you need fresh, low-moisture mozzarella. You’ll likely find this in the deli or cheese aisle of the grocery store (instead of the dairy aisle).

If you can’t find it, you can use grated mozzarella instead, but it won’t have the same texture.

What is the best way to prepare scrambled eggs?

It is best to cook scrambled eggs slowly over low to medium heat. In this way, they cook sufficiently without the eggs drying out.

Make sure to stir the eggs constantly so they cook evenly, and remove them from the heat as soon as they’re done cooking!

Ingredients:

  • 2 eggs

  • 2-3 slices of tomato

  • 2-3 slices of fresh mozzarella

Instructions:

  1. Scrambled eggs in a bowl or measuring cup. Drizzle olive oil into a pan over medium heat. Fill in eggs.
