I don’t know about you but I think this is a delicious sandwich filling! When I left Britain a few years ago I had times when I felt homeless, so Kat made it for me one day and it really helped.

It’s safe to say that I’ve been repeating it ever since!

If you haven’t heard of Coronation Chicken, it’s traditionally made with chicken, with sultanas added to a spicy creamy mayo for a juicy sweet kick.

It was created to celebrate the coronation of Queen Elizabeth II and this vegetarian version is perfect for any coronation feast.

Vegetarian sandwich fillings don’t have to be boring and they definitely don’t have to be tasteless – this recipe will prove that!

Materials

There are a few pieces to this puzzle but it’s really easy if you group them together, so let’s get started,

Veggies of course, think Quorn or Linda McCartney ‘chicken’, or you can throw in some tofu slices if you fancy it.

I made a super simple sauce using mayonnaise, olive oil and water. Then I added curry paste with mango chutney and some spices with sweet.

Balance it out with some lemon juice and tomato puree and we’re halfway there!

For spicy mayo I like to add thyme, parsley, salt and black pepper; It’s really going to pique that smell!

If you think this sandwich filling can’t get any better why not add some raisins? Or my personal favorite, to add some Dijon mustard!

I like to use a fresh crusty baguette, cut lengthwise and filled with a creamy filling. Then I add some lettuce leaves and grated cheese to finish – perfection!

Health benefits

This creamy dressing has lots of fresh ingredients. Coronation sauce contains tomato paste which is high in vitamin C and folate.

Chicken pieces (whichever you decide to use) are a good source of protein and are low in saturated fat.

This means that eating this jubilee chicken is a great way to stay full longer, helping to hit those protein goals.

I often use seitan-based crumbles in mine because the protein levels are so high.

How to make a Coronation (not) chicken

Time required: 30 minutes.

This vegetarian coronation chicken is one of my favorite vegetarian sandwich fillings because it’s so easy to make, check it out!

  1. Q Time:

  2. Dressing Time:

    Mix together curry paste, Mayonnaise, Mango Chutney, lemon juice, Tomato puree, Thyme, Parsley, salt, pepper And Mustard And raisin/Apricots (if used).Metal bowl with sauce for vegetarian coronation chicken  Fast food up

  3. Mixing time:

    Give it a good shake all day. If the sauce seems too thick, add a few tablespoons of water and stir again. When the veggie bites are cool, mix them in as well.

  4. Serving Time:

How to save it?

Like most sandwich fillings, this vegetarian coronation chicken is best stored in an airtight container in the refrigerator. Make sure to use it within 3 days due to the mayonnaise content.

What is served with it?

This veggie filling is great on a baguette or other crusty roll, but if you’re trying to reduce the amount of bread in your diet, Coronation (not) chicken on a baked potato with a green salad on the side is also great!

Can I forward it?

Yes, you can make this vegetarian coronation chicken ahead of time, as long as it’s refrigerated until you use it and it’s eaten within 3 days.

Why is it called coronation chicken?

It was reputed to have been made to be eaten during Queen Elizabeth’s coronation in 1953, and may have been called “Poulet Reine Elizabeth” (Queen Elizabeth’s chicken!).

How does coronation chicken taste?

Coronation chicken has a really interesting smell. First, it’s nice and creamy, it’s savory and tangy, but then if you add raisins, you find a little sweetness behind the mild spice.

Variety of recipes

If you don’t like certain ingredients or you just can’t get hold of them, there are a few ways you can change this recipe:

  • Protein: If you’re not interested in soy chunks of chicken, why not try chickpeas or tofu? Seitan slices work really nicely.
  • Sauce Ingredients: If you don’t have lemon, try lemon juice. You can swap out plain mayo for crème fraîche or even vegan mayonnaise. If you can’t find curry paste, use a mild curry powder, or use apricot jam instead of mango chutney, the possibilities are endless.

You can really experiment with making your own version, it’s always going to make a really good sandwich!

Vegetarian Coronation Chicken

If you want a classic veggie picnic, high-protein Coronation (not) chicken sandwiches are what you need!

Optional:

  • 1 the paw raisin (or dried apricots if you prefer sweet)
  • 1-2 teaspoon Dijon mustard (For an extra kick – Dave’s choice)

  • warm up the oil In a pan and fry veggie bites until lightly browned and crispy – about five minutes. Once done remove from heat and let cool.

    1 cup veggie ‘meat’, 1 tablespoon olive oil

  • Mix together Curry paste, mayonnaise, mango chutney, lemon juice, tomato puree, thyme, parsley, salt, pepper And Mustard And Raisins/apricots (if used).

    3 tbsp curry paste, 3 tablespoons of mayonnaise, 3 tablespoons of mango chutney, 3 tablespoons lemon juice, 3 tbsp tomato puree, 1 teaspoon thyme, dried 1 teaspoon parsley, dried Test the salt and pepper. 1 handful of raisins

  • Give it a good shake all day. If the sauce seems too thick, add a few spoonfuls the water. Stir again.

    3 tablespoons of water

  • When the veggie bites are cool, mix them in as well.

  • Serving a baguette layered with shredded Lettuce and sprinkle grated cheddar above

    1 baguette, 4 lettuce leaves, 4 tablespoons cheddar cheese, grated

  • That’s it!

  • More serving ideas: If you want to cut bread, a baked potato is great with chicken carnations (no) instead! It is versatile like a queen 😉
