This sheet pan chicken fajitas recipe is quick to put together for a delicious and healthy weeknight meal. Chicken breast fillets, a mixture of peppers and onions are roasted to perfection and wrapped together in tortillas – a recipe the whole family will love.

What are fajitas?
Fajitas are a Tex-Mex dish that typically consists of a stripped protein (usually chicken or beef) and stripped vegetables (pepper and onion) marinated in the flavors of a Mexican-inspired spice. They are then served in a flour or corn tortilla with toppings.
This chicken fajita recipe is prepared on a sheet pan for easy cooking and easy cleanup. No grilling required!
Ingredients in Sheet Pan Chicken Fajitas
chicken keeper – I buy pre-sliced chicken breasts because you need to cut your boneless, skinless chicken breasts into strips anyway. If you can’t find pre-sliced chicken breast fillets, you can use boneless, skinless chicken breasts and cut them into strips.
olive oil – for coating chicken and vegetables.
Homemade Fajita Seasoning – Chili powder, garlic powder, onion powder, cumin and salt are combined to make a fajitas seasoning for chicken. If desired, add a pinch of cayenne pepper for a little heat boost.
paprika – I use 3 types (red peppers, yellow peppers and green peppers), but feel free to use 3 of the same or different types.
Onion – You can use yellow or red onions, but be sure to slice them so they cook evenly.
Flour tortillas or corn tortillas – Wrap your sheet metal chicken fajitas in tortillas! Use corn tortillas if you are gluten free.
How to make sheet pan fajitas
STEP 1: MAKE HOMEMADE FAJITA SEASONING
In a large bowl, mix together all the ingredients for the fajita seasoning.

STEP 2: COAT CHICKEN AND VEGETABLES
Add chicken and olive oil to fajita seasoning and toss to coat. Add the peppers and onion and stir.

STEP 3: FRY
Spread the chicken, peppers and onion on a baking sheet. Bake in the oven for 15 minutes. Turn on broiler and grill 2-3 minutes or until chicken and vegetables are browned. Be careful not to burn them.

STEP 4: ASSEMBLE
Serve chicken and vegetables in heated tortillas with desired toppings.
What toppings do you put on a fajita?
Ultimately, what toppings you put on your chicken fajitas is up to you, but here are some delicious ideas!
- sour cream – a dollop of sour cream is always a good idea. Greek yogurt works too.
- lime wedges – Add a small squeeze of lime juice to your fajitas before serving
- guacamole – Use store-bought or homemade ones. Sliced avocado is a great option too!
- salsa – Again, you can use store-bought or homemade ones
- coriander – Sprinkle a little cilantro on top of your sheet pan fajitas or leave it out if you don’t like cilantro
- Grated cheese– Buy pre-shredded or shred yourself. Cheddar works great, or try a more traditional Mexican cheese like cotija.
- Green Onions – green parts only, sliced

How to store and reheat leftovers
Refrigerator – Store your leftovers in an airtight container. Reheat in the oven, on the stovetop or in the microwave.
freezer – Personally, I would not recommend this recipe for freezing.

Homemade Fajita Seasoning:
- 2 tbsp chilli powder
- 1 teaspoon garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cumin
- 1/2 tsp Salt
For the chicken fajitas:
- 1 1/2 pound chicken tender, cut lengthwise
- 2 tbsp olive oil
- 1 Red pepper, cored + cut
- 1 yellow peppers, cored + cut
- 1 green paprika, cored + cut
- 1 small yellow onion, cut
- 8th–10 Corn or flour tortillas
- Toppings: cilantro, guacamole, salsa, avocado, lime, sour cream, spring onions etc…
- Preheat oven to 400 degrees F.
- Drizzle some olive oil on a baking sheet or spray with cooking spray.
- In a large bowl, mix together all the ingredients for the fajita seasoning.
- Add chicken and olive oil to fajita seasoning and toss to coat.
- Add the peppers and onion and mix well.
- Spread the chicken, peppers and onion on a baking sheet. Bake in the oven for 15 minutes.
- Turn on broiler and grill 2-3 minutes or until chicken and vegetables are browned. Be careful not to burn them.
- Serve chicken and vegetables in heated tortillas with desired toppings.
