Today we are going to show you how to bake delicious purple ube filling cookies. Crispy on the outside and creamy on the insidethey’re a real treat worth trying – and they’re 100% vegan!
For this recipe, you will need Ube Spread to make both the cookie dough and the filling. Ube spread is made from fresh purple yams that are cooked with sugar and mashed into a puree. It’s sweet, creamy and with a vivid purple hue.
You can find Ube Spread online or at your local Filipino or Asian grocery store. It often comes under the name of Ube Halayawhich means “purple yam” in Filipino.
But the ube spread alone won’t work as a filling for these cookie sandwiches. That’s because it’s too soft and easily squeezes out when you put the cookies together or bite into them. That’s where coconut oil comes in!
Soak the coconut oil at room temperature, mix with Ube spread and leave to harden slightly in the fridge. You get a dense cream that is perfect as a filling for your biscuits.
We actually have a vegan ube butter recipe that already combines purple yams with coconut oil and some maple syrup for sweetness.

As ingredients for the cookie dough, we used our vegan Ube spread instead of butter and maple syrup instead of refined white sugar. We’ve also added a little almond flour for extra flavor and crunch.
Using cocoa powder in the cookie dough is optional. But it adds a nice depth of flavor and gives the cookies a nice and even color.
If you don’t use cocoa, the cookies will have a pale pastel pink and golden hue after baking. That’s because we didn’t use food coloring, just a spread.
The secret to these Ube-filled cookie sandwiches is to make the cookies as thin as possible. The thinner they are, the crispier they will be.
