RECIPE: Poblano Breakfast Scramble with perfect scrambled eggs
Top up your scrambled eggs with potatoes and poblano peppers
Ingredients
- 2 tablespoon olive oil divided
- 2 Middle red potatoes diced into 1/4″ pieces
- 1 small Poblano pepper cored and chopped
- 8th eggs
- 1 tablespoon chopped onion
- 1 tsp garlic powder
- 1 Cup grated cheddar cheese
- coriander optional set

Heat 1 tbsp olive oil in a large pan. Add the diced potatoes and sauté for 5 to 6 minutes, stirring frequently. Add the chopped poblano pepper and sauté with the potatoes for an additional 3 to 4 minutes or until tender. Set potatoes and peppers aside on a plate.

In a medium-sized mixing bowl, crack the eggs and whisk well. Add the chopped onion and garlic powder and toss again.

In the same pan, add the remaining olive oil and spread in the pan. Set the heat to medium. Pour in the egg mixture. Let the eggs sit for a minute or two, then squeeze and stir the eggs to cook all of the eggs through. Once cooked through, add the potatoes and peppers back in and stir.

Scatter the grated cheese on top and serve immediately.
