  • In the bowl of a stand mixer, combine the flour, salt, honey, yeast, olive oil, and water.
  • Knead with the dough hook attachment until the dough is no longer sticking to the sides of the mixing bowl. It should have a smooth, sticky, and springy appearance when kneaded. Depending on what flour you use, you may need to add more.
  • Place the dough in a bowl greased with olive oil and cover with plastic wrap. Let the dough rise for about 1 hour or until doubled in size.

  • Once the dough has risen, divide it into 2 equal pieces. This makes 2 large pizzas.

  • At this point you could do 1 of 2 things. You can wrap the dough in cling film and freeze for later, or roll out onto 2 pizza sheets and let rise again for about 30 minutes before adding the pizza toppings and baking. I usually bake my pizza in a preheated 475 degree oven for about 10-15 minutes.
