This delicious sheet pan pork chops dish doesn’t use a lot of ingredients, cooks everything in one pan, but combines unique flavors like apples and sweet potatoes to put together an amazing meal that the whole family will enjoy!   • Pork Chops: Usually a leaner cut of pork, you can use boneless pork chops, but leaving the bone on your pork chop will result in a tastier, more tender dish.
  • Olive oil: Heart-healthy, light oil so everything cooks evenly and preserves the spices.

  • Preheat oven to 350 degrees. Line a large baking sheet with foil and spray with cooking spray.

  • Mix half the olive oil (two tablespoons) with the fresh herbs, garlic, salt and pepper, then rub the pork chops evenly to coat both sides. Place in one layer on the baking sheet.

  • Scatter apples, onions, and sweet potatoes around the pork chops. Drizzle with 2 tablespoons olive oil, season with salt and pepper, then mix well with your hands. Bake until pork is golden and cooked through, about 25-30 minutes depending on thickness of pork.
