In order to make our jam recipe healthier and low in sugar, we have replaced the classic caster sugar with erythritol.
Erythritol is a natural and safe sweetener that looks and tastes like sugar but has no calories.
That means all of the sugars in this jam are just naturally occurring sugars from papayas and nothing else.
But since papayas don’t have a lot of pectin and you won’t have those oodles of sugar to thicken the jam for you, you’ll need a little cornstarch to thicken the jam.
Starch is a wonderful thickening agent that can perfectly replace pectin in jam. We have used it successfully in many sugar free jam recipes and decided to use it again in this one.
Just make sure to add starch to the hot papaya jam by following our directions exactly, or you’ll end up with some nasty lumps.

These seeds are high in soluble fiber, which forms a gel when mixed with water. The great thing about them is that they are also very nutritious.

In our pectin-free papaya jam recipe, we used a little starch to naturally thicken the jam in just a few minutes.

Can you make papaya jam without sugar?
Yes, with erythritol, a safe and natural sweetener, you can easily make papaya jam without sugar.
Use granulated erythritol the same way you would sugar: add it to the boiling papaya and stir until dissolved.
Since erythritol is almost as sweet as sugar, you can use it as a sugar substitute in jams at a ratio of 1:1 or 1:1.3 sugar to erythritol.
