Potato Soup is the ultimate comfort food and fully customizable with your favorite baked potato toppings – bacon, cheese, sour cream, chives and whatever your heart desires! My secret ingredient – Frozen Hash Browns
Yes, I use frozen hash browns for my potatoes because they are already cooked and all you have to do is warm them up. Enormous time savings! If you want your soup to be smoother at the end, give it a few pulses with an immersion blender.
Tips and tricks for the best loaded potato soup
Here are a few tips and tricks for making the perfect potato soup:
- Cooking warning: DO NOT boil your soup after adding the milk. Just set it back on low and let it do its thing.
- Milk: For the creamiest soup, use whole milk. You can also use milk with a lower fat content, e.g. B. 2% or 1% milk.
- Variations: Feel free to add more veggies (carrots, broccoli, or cauliflower are great) or change the spices to your liking.
- toppings: This potato soup tastes best when you load up on the toppings. Any toppings you would put on a regular loaded baked potato are perfect for this soup.

Sauté onion + carrots
Melt in a large saucepan butter. sear onion and carrot until they start to get tender. sprinkle Flour over vegetables and stir to create a paste.


Add chicken broth, hash browns + spices
Stir in chicken broth and bring to a boil. The soup will thicken quite a bit. Add frozen hash browns And Spices.


Cook
Cook covered over medium heat until carrots are tender and potatoes are thawed and become softabout 10 minutes.

Stir in milk, sour cream + chives
stir in Milk, sour cream and dried chives and reduce heat. Cook until the soup is hot but not boiling. Pour into bowls and sprinkle on top Cheese, bacon and chives. Serve hot!



What to serve with potato soup
Loaded Potato Soup is delicious, especially with whole wheat buns, my mom’s potato buns, or these angel biscuits. Really, all freshly baked carbs. Add some freshness by serving it alongside a green salad.

Soup is one of those meals that is great to prepare ahead of time and reheat when it’s ready to eat! To store in the fridge, allow the soup to cool to room temperature, then transfer to an airtight container. You can use a plastic or glass container, or even a ziplock plastic bag. Potato soup should keep in the fridge for 3-4 days.
Freeze: Allow the soup to cool to room temperature, then transfer to a freezer-safe container. You can use a plastic or glass container, or even a ziplock plastic bag. Make sure the container is tightly closed to prevent air from entering. Potato soup can be frozen for up to 3 months. Place in the fridge to thaw and let thaw overnight.
It’s important to note that the potato soup may thicken as it reheats due to the starch in the potatoes. To dilute it, you can add a little broth or milk when reheating.
