Chicken Pesto Wraps – super easy chicken wraps that you can make ahead of time or serve up for a quick and easy dinner! Stuffed with chicken, cheese, pesto, tomatoes and more!

I love having a wrap for lunch. They are easy to store in the fridge or take with you to work or school. And there are a million ways you can mix them up! Southwestern chicken wraps might be my favorite.

But you can make Buffalo Chicken Wraps, Chicken Caesar Wraps, Chicken Bacon Ranch Wraps… whatever you want, it works as a tortilla!

what you will need

  • Large tortillas or wraps
  • Boiled Chicken
  • Pesto
  • mozzarella cheese
  • avocado
  • spinach

What kind of chicken to use

For the chicken You can really use any chicken you have. I like to use store-bought rotisserie chicken, so it’s already cooked and seasoned. That way it’s literally a no-cook meal.

But you can use leftover chicken, chicken tenders that you cook and cut up, and this would even work with leftover turkey if you have it over the holidays.

Best pesto to use

Store bought is super easy to find and what I use a lot. You can usually find a fresh version near the fresh tortellini and other pasta and a preserved version in the dried pasta aisle. I’ve used both and it really is what you prefer. But if you’re looking for a homemade version, I have 2 that I really like.

  • Arugula Pesto – the tangy arugula with the basil gives it a great flavor. Not quite like the original, but still very good.
  • Spinach pesto – this is a mix of spinach and basil, which gives it a slightly milder flavor than using basil.

How to Make Chicken Pesto Wraps

  1. In a bowl, mix the chicken, pesto, and cheese until well combined.
  2. Arrange tortillas on a surface in front of you. Place a small handful of spinach in the center of each. Lay the avocado slices on the spinach. Divide the chicken mixture evenly among the tortillas.
  3. Fold the sides over the chicken and wrap tightly to close. Halve and serve.

I just went with just mozzarella cheese, spinach, and avocado for these. But there are many ways you can customize it. Here are also a few that I really like.

  • Add chopped tomatoes
  • Add sliced ​​red onion
  • Mix in the cheeses – cheddar is great, but smoked gouda or even feta works well too
  • Bacon – the saltiness is a really great unexpected flavor to add to these
  • Greens – I used spinach, but any type of greens work great. Romaine lettuce, iceberg lettuce, mixed leafy greens… whatever you have or like is perfect.

Can you make this low carb?

I know a lot of people are trying to cut carbs lately, and you can easily use low carb tortillas to make these. Everything else goes with the low carb diet of course, so they’re a great option if that’s what you’re looking for.

  • 1 cup cooked chicken, chopped or shredded
  • 1/3 cup pesto
  • 1/3 cup grated mozzarella cheese
  • 1 avocado, sliced
  • Handful of spinach
