Ingredients
- 4 cups waxy potatoes diced into 1/2-1/4 inch pieces
- 6 tablespoon Salted butter
- 1 large yellow onion finely diced
- 1 tablespoon chopped garlic
- 4 cups Corned beef cut into 1/2-1/4 inch cubes
- salt and pepper to taste
- Parsely optional, for garnish

Bring a pot of water to a boil and add the diced potatoes. Cook for 7-8 minutes, then drain and pat dry.

In a large skillet melt the butter over medium heat. Add the diced onion and cook for 5 minutes.

Add the chopped garlic and sauté for 1 more minute.

Add the potatoes and corned beef to the pan and stir gently.

Reduce the heat to medium-high and use a spatula to break up the hash into smaller pieces, if desired. Press the mixture down in the pan to ensure even browning. Cook for 7-8 minutes without turning.
