Last December 2022, while we were visiting our parents again, my son went shrimp with his cousins and “accidentally” caught 2 crabs. Brought back to my parents, my sister and I cooked this for our family lunch. The buttery and savory salted egg yolk sauce paired with the crab’s natural sweetness was so delicious. If you are a crab lover, this is definitely a dish you will regret not trying!

Ingredients:
2 crabs, small to medium sized
Some potato starch
1 bird’s eye chili/chili padi
1-2 sprigs of curry leaves
2 salted eggs, steamed and mashed
20 grams of butter
1/2 tsp curry powder
1 heaped tbsp milk powder
3 tbsp milk
Pinch of salt and sugar, to taste
Some oil for cooking

2. Heat butter and some oil, stir-fry salted egg, chili, curry powder and curry leaves until aromatic. Add the remaining ingredients and mix well. Add shrimp, toss to coat shrimp with sauce and serve immediately.
