Selected ingredients
Broccoli: the star of the show is obviously broccoli for this recipe. We highly recommend using similarly sized broccoli florets to ensure even cooking.
lemon juice: a little lemon juice will brighten the broccoli.
Olive oil: To fry vegetables in the oven, you need a little oil. We chose olive oil because we love the taste. Feel free to use any oil you like.
Salt pepper: We kept the seasoning simple for this Roasted Broccoli recipe. A little salt and pepper did the trick.
Parmesan cheese: This is optional, but we love the cheesy bite that a dusting of parmesan on roasted broccoli imparts. Add it just before serving.

How to roast broccoli

Preparation & Season
Preheat the oven to 375ºF, spread the broccoli on the baking sheet and drizzle with olive oil. Massage the oil into the broccoli with your hands.
Season the broccoli with salt and pepper and massage the broccoli again.
Fry broccoli
Place the baking sheet in the oven and bake for 15-17 minutes, turning halfway through.
Garnish & Enjoy!
Place the broccoli in a large serving bowl, add the lemon juice and Parmesan and toss. Enjoy!

Best Tips
Cut broccoli into similar sizes: Make sure to cut your broccoli florets evenly so they’re all about the same size. This will ensure they roast at the same rate.
Cook until brown and not burnt: Roast your broccoli for about 15-20 minutes or until golden brown. Ours lasted 17 minutes and came out perfectly roasted and not mushy or burnt (not overdone at all!).
ovens vary: Ovens can vary in temperature. Be sure to check your broccoli halfway through to estimate how much extra time it will take to roast.
Frequently Asked Questions About Roasted Broccoli
You definitely don’t have to! By roasting broccoli for 17 minutes at 375°F, you’ll have perfectly roasted broccoli with a bite that’s never mushy.
To avoid soggy broccoli, do not overfill the sheet pan as the broccoli will steam as it cooks.
Oiling vegetables before frying not only helps keep them from sticking to the pan, but also allows them to brown perfectly and add a rich, nutty flavor.

How to freeze roasted broccoli
- Allow the broccoli to cool completely.
- Transfer to a parchment-lined baking sheet, spreading so the florets aren’t touching.
- Freeze for about 2 hours.
- Once frozen, transfer to an airtight container or gallon-sized plastic bag. Freeze up to 3 months.
