BBQ Chicken Nachos – a fun and easy dinner or appetizer for your next party. Loaded with rotisserie chicken, cheese and every topping you can think of!

Whenever I see nachos on a menu, it’s the first thing I want to order. Crunchy tortilla chips, melty cheese, sour cream, guacamole… my mouth is watering just thinking about it! My Sheet Pan Chicken Nachos are simply your classic version with spiced chicken and traditional toppings.

Today we’re going to mix it up the barbecue way, because why not?! It’s flavors that just go together and you’ll love it for your next fun dinner or appetizer.

  • Nachos are just plain fun, so you won’t have picky eaters complaining about it! You can customize the toppings and just put beans on the half if some like it. So everything will be happy!

  • Go crazy with your toppings! I listed many ideas, but that’s definitely not all. So if you think something else sounds good, go for it.

How do I cook the chicken

Here things really can happen as you want!

  • You can make Instant Pot BBQ Chicken in your pressure cooker in minutes.
  • Fire up the grill and prepare grilled chicken. Grill the chicken and baste with sauce. Then remove the chicken, shred and toss in the sauce to coat.
  • Take a shortcut with fried chicken or par-cooked chicken. If you have leftover chicken but have a roast chicken or that pre-shredded stuff they now sell at the grocery store, just toss it with your favorite barbecue sauce and you’re good to go.
  • The opposite way to the pressure cooker is the slow cooker. You can use your crockpot, but you typically cook chicken and just coat it with barbecue sauce. I cook on low for about 3-4 hours and it’s perfectly cooked, tender and juicy. Shred the cooked chicken and toss with more sauce if needed.

How to make BBQ Chicken Nachos

  1. Once you’ve cooked and coated your chicken in sauce, you’re good to go. Get your oven nice and hot and line a baking sheet with foil. This isn’t necessary, it just makes cleaning easier so the cheese doesn’t stick to your baking sheet.
  2. I think the best nachos in line at the restaurants here is to make it in layers. So, take half of your tortilla chips and spread them out on the baking sheet.
  3. Then add your toppings! Again, only add about half of it in this layer. Scatter over the rotisserie chicken, black beans, corn, red onion, and cheese.
  4. Top with the remaining chips and toppings. Then place in the oven for about 10 minutes or until the cheese is completely melted and hot.
  5. Remove from the oven and top with fresh diced tomatoes. And serve with sour cream and guacamole and more barbecue sauce.

This is where you can really get creative. I listed a few in the recipe, but here are a few more that work really well with these nachos

  • Jalapeno – add fresh or pickled jalapenos for a good kick
  • Fresh coriander goes very well with grilling
  • Boiled and crumbled bacon
  • Banana peppers
  • Chopped pineapple
  • Green Onions

Which cheese goes with nachos

You can get creative with your cheese as there are many options. You want one that fits well and will melt well.

  • Cheddar cheese
  • Monterey Jack
  • colby
  • Mexican Blend (pre-shredded at grocery store)
  • pepper shaker
  • White queso

Serve with sour cream and homemade guacamole for dipping and you have an unbeatable combination!

Ingredients

  • 3 cups cooked and shredded chicken
  • 1 cup barbecue sauce
  • 14.5 ounce bag of tortilla chips
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1/3 cup red onion, finely chopped
  • 1 1/2 cup shredded cheddar cheese
  • 1 1/2 cup shredded Colby Jack cheese
  • 1 tomato, diced

instructions

  1. Preheat oven to 350ºF. Line a sheet pan with foil.
  2. In a bowl, toss the chicken and barbecue sauce together until well coated.
  3. Arrange half of your tortilla chips on the baking sheet.
  4. Scatter half of the rotisserie chicken, black beans, corn on the cob, red onion, and cheese over the tortilla chips.
  5. Top with the remaining chips and toppings.
  6. Then place in the oven for about 10 minutes or until the cheese is completely melted and hot.
  7. Remove from the oven and top with fresh diced tomatoes.
  8. And serve with sour cream and guacamole and more barbecue sauce, if desired.
