What is spring mix

Spring mix is ​​a term used for a collection of vegetables that usually includes spinach, tender baby lettuce, arugula, young beet leaves, and others. It may also contain red and green romaine, chard, endive and radicchio.

  • Pre-mix the dressing. To get the full flavor of the dressing, premix it in a jar so it emulsifies when you add it to your spring mix salad.
  • Cut the vegetables to a uniform size. So that one vegetable does not dominate the salad, cut everything to a similar size. That way they all fit into one bite.
  • Dress the salad just before serving. To avoid soggy leafy greens, dress the salad just before serving. The longer it sits, the more the dressing will be absorbed into the leaves.
