Notes on ingredients
Sausage– For speed and simplicity, we use a large, flavored Italian leftover sausage (spicy or mild – your choice!) that’s already pre-cooked. Feel free to use chicken sausage, vegan sausageor cook ground sausage or uncooked links to add. Also an option to leave out the meat and add sautéed mushrooms or even chickpeas or kidney beans.
Whole peeled tomatoes– Generally made with higher quality tomatoes and they break down beautifully in sauce.
fennel seeds– Give an anise flavor that really creates a delicious complexity.

Yes! It works great when they contain a bit of moisture, like a sauce or juicy veggies.
In general, whole tomatoes are of higher quality as they need to be in good shape to process. Calcium chloride is added to diced tomatoes to maintain their shape. They don’t break down as well in sauces.
It is packed with flavors of garlic, herbs, anise or fennel and can be found hot or mild.

These baked gnocchi with kale and sausage are hearty and delicious. Adaptable to vegetarians and easy enough for weeknights. A cozy one pot meal that’s ready in about 30 minutes!
- Preheat oven to 350F. In a 12-inch ovenproof skillet or brazier over medium-high heat, sauté garlic with red pepper flakes and fennel seeds in olive oil for 2-3 minutes.
- Add tomatoes, salt, pepper and oregano. Roughly chop the tomatoes with a spoon. Add the kale and simmer on low until the kale is tender and the sauce has thickened, about 10 minutes. Remove from stove.
- Add sausage and gnocchi. Top with grated parmesan and mozzarella slices.
- Bake uncovered for 20 minutes until bubbles appear.
Remarks
Feel free to swap plant-based sausage for Italian sausage.
If you use raw Italian sausage cuts, make sure you slice and brown them first, cook through before adding.
