How to make Strawberry Lemon Thumbprint Cookies

Ingredients

Lemon cookies

  • 1 egg
  • 1 tbsp + 1 tsp (20 ml) vegetable oil
  • 1 tbsp + 1 tsp (20 ml) coconut oil melted
  • 1½ Cup (190 g) all-purpose flour
  • 1 tsp (4g) baking powder
  • 1/4 tsp (1g) salt
  • Lemon peel from 2 organic lemons
  • 1 tsp (5 mL) vanilla extract
  • yellow food coloring Optional

Strawberry Jam

  • 5 oz (150g) Strawberries fresh or frozen
  • 1/4 Cup (50g) sugar
  • 1/2 tsp (2 g) tonka powder Optional
  • 1 tablespoon (8 g) cornstarch
  • 1 tsp (5 mL) cold water

Lemon Sugar Glaze

  • 3 tablespoon (24 g) powdered sugar
  • 1 tsp (5 mL) lemon juice
