Shrimp Scampi – juicy shrimp sautéed in a garlic butter sauce with hints of white wine and lemon. Ready in about 15 minutes so perfect for entertaining or a busy weeknight.

Shrimp scampi is one of those dishes that sounds difficult to make. You see it on restaurant menus and just assume it’s going to be difficult at home. But believe me, it’s not! It’s really just shrimp cooked in garlic butter.

And can you really go wrong with butter and garlic?

Why this recipe works

  • Shrimp cooks in about 10 minutes, so this is one of those super quick recipes that you can make in minutes on a busy weeknight.
  • Stock up when shrimp are on sale. Shrimp seem to be on sale regularly and they last a long time in the freezer so buy a few bags and have them on hand.
  • Shrimp are very low in calories and high in protein. So in itself it is a very nutritious option. Helps weigh the butter in the recipe. You can adjust the amount of butter if you want to reduce some of the calories.

  • Large or jumbo shrimp
  • olive oil
  • butter
  • Garlic
  • White wine
  • salt pepper
  • Parsely
  • lemon juice

This recipe isn’t asking much, but if you don’t have wine or just don’t want to cook with it, you can omit it or use chicken broth instead. Some studies show that not all alcohol in a recipe is fully boiled out. So if you don’t want to use it, you definitely don’t have to.

How to make Shrimp Scampi

  1. In a large skillet, heat the olive oil and butter together over medium-high heat. Once melted, add the garlic and cook for a minute or two.
  2. Season the shrimp with salt and pepper and add to the pan. Fry for about 2 minutes and then flip to the other side.
  3. Pour in the wine and simmer for a few minutes, until the wine has reduced by about half and the shrimp are pink and cooked through.
  4. Remove from heat, stir in lemon juice and sprinkle with parsley.

recipe tips

  • This is one of those recipes where you want to have everything set up and measured out before you start cooking. Shrimp cook very quickly, so you don’t want to chop up the parsley and overcook it.
  • I like to use large or jumbo shrimp for this recipe. The bigger the shrimp, the better they taste in my opinion. But you can really use any size and it will work great.
  • When using the white wine in this recipe, choose a dry white wine that you enjoy drinking. It doesn’t have to be expensive, just something you enjoy. Something like a Chardonnay or Sauvignon Blanc work well.

  • 2 tablespoons olive oil
  • 4 garlic cloves, chopped
  • 1/3 cup dry white wine
  • 2 tablespoons chopped fresh parsley
  • 2 teaspoons lemon juice
  • salt pepper
