I did it again… I went to the store and bought a ridiculous amount of spinach with the intention of using it right away. Little did I know that soon after this trip my whole family would get sick, including me. Which resulted in me lying around not wanting to cook.

Long story short, the spinach sat in my fridge for a few days. Out of sight out of mind.

But if you ask anyone who knows me well, they will tell you I hate wasting food. So, before the spinach went bad, I decided to whip up a batch of mine {Gluten Free} Sweet Spinach Muffins. These little fellows are naturally sweetened, perfectly soft and insanely addicting. You would not know that they are full of healthy spinach! (PS- all my kids devour them!)

WHAT INGREDIENTS DO I NEED FOR SWEET SPINACH MUFFINS?

  • 2 cups gluten free flour (You can also use regular flour. I’ve done both.)
  • 2 tsp cinnamon
  • 2 teaspoons of baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup vanilla almond milk – reduced sugar
  • 3 cups fresh spinach
  • 1 banana
  • 1/3 cup coconut oil
  • 1 egg
  • 1 tsp vanilla
  • 1/3 cup honey

HOW DO I MAKE SWEET SPINACH MUFFINS?

STEP 1: Begin by preheating your oven to 350 degrees F.

STEP 2: In a blender or food processor, blend 1 banana with 1 cup vanilla almond milk, 3 cups fresh spinach, 1/3 cup melted coconut oil, 1/3 cup honey, 1 egg, and 1 tsp vanilla.

STEP 3: In a large bowl, mix together the following dry ingredients: 2 cups gluten-free flour, 2 tsp cinnamon, 2 tsp baking powder, 1/2 tsp baking powder, and 1/4 tsp salt.

STEP 4: Slowly combine the wet and dry ingredients. (I used a whisk for this, no need for a large mixer).

STEP 5: Once all the ingredients are combined, pour the batter into a prepared muffin tin and bake for about 18-20 minutes. (If you’re using mini muffins, they should only take about 10 minutes).

Gluten Free Sweet Spinach Muffins

Ingredients

  • 2 cups gluten free flour

  • 2 tsp cinnamon

  7. Remove from oven and allow to cool.
