How to make Lemon Pasta with Chicken and Broccoli

  • Preheat grill to high heat.

  • Bring a large pot of salted water to a boil and cook the spaghetti according to package directions. (Subtract one minute of cooking time for al dente.)

  • Add the broccoli to the boiling water with the pasta when 2 minutes of cooking time remains. Drain pasta and broccoli, reserving 1 cl of starchy cooking liquid.

  • Lightly brush chicken breasts with 1 tsp olive oil, sea salt and red chili flakes.

  • Grill the chicken breasts until browned, about 4 minutes per side.

  • In the same saucepan you used to cook the pasta and broccoli, heat the remaining 1 Tbsp olive oil over medium-high heat.

  • Add garlic and cook for 30 seconds.

  • Add pasta, broccoli, and cooked chicken (diced).

  • If the mixture seems dry, add some of the reserved starchy cooking liquid until you reach your desired consistency.

  • Season with lemon juice, zest and parmesan.

  • Check for seasonings and add more salt or pepper if needed.

  • Garnish with toasted pine nuts and fresh basil.
