Here are the ingredients you will need for this recipe:

  • Vegetarian Marshmallows — I used Dandy’s Mini Marshmallows.
  • Vegan Butter — You will need 6 tablespoons of vegan butter and I recommend using a stick like Earth Balance instead of tub margarine which sometimes has a higher water content.
  • Vanilla extract
  • salt
  • Rice Krispies Cereal — You can use name-brand cereal or generic store brand. Both will work fine.

Making Rice Krispie Treats in the Microwave

I personally find using the microwave to be a better process because it’s faster and the marshmallows melt more evenly.

  1. Combine all but the butter and one cup of the marshmallows in a microwave-safe bowl.
Mini marshmallows are combined in a bowl with vegan butter.
  2. Microwave on high for 2 minutes. Then stir.
  3. Microwave on high for 30 seconds to a minute until all the marshmallows are melted. Stir to combine.

Frequently Asked Questions

Can Vegans Eat Rice Krispie Treats?

Most rice krispie treats made with marshmallows aren’t even vegetarian (thanks to the gelatin), so they’re not connected to a vegetarian diet or vegan diet. Additionally, they can be made with dairy butter. However, they are easy to make vegetarian at home!

Why is my rice so hard?

Make sure to melt the marshmallows over low to medium-low heat. If the marshmallows are too hot, their sugars can crystallize, making your treats hard as rocks. Slow and steady wins the race when it comes to melting marshmallows.

Can I use stale vegan marshmallows?

I used some very stale marshmallows to make these rice crispy treats and it worked just fine.

Marshmallows

  • You can increase the marshmallows to 9 cups for even more gooey bars.
