When you start the day with a good breakfast, you won’t overeat during the day. Although I didn’t like breakfast as a kid because I never liked eggs, I enjoy vegetarian breakfasts. And breakfast for dinner is one of my favorites! Regardless of the time of day, a chickpea omelette is always delicious. What I love about this vegan chickpea omelette recipe is not only how easy it is to make, but it’s also low in calories yet filling!

Chickpea flour, notably, is made from dried chickpeas. Although I haven’t made my gram flour, it’s easy. First all you need are dry chickpeas and a food processor. Then, you grind the dry chickpeas until they form a flour.

I buy gram flour Often as I use it for baking and binders while cooking. Also, it is a great thickener when making sauces and gravies. And, the fact that gram flour is gluten-free is an even better reason to cook with it.

Chickpea Omelette Bata Ingredients

I am mixing chickpea flour, plant milk, vegetable stock and spices in a bowl.
  • Chickpea Flour: Chickpea flour is full of healthy nutrients. It is a great alternative to refined wheat flour, as it is low in carbohydrates and calories but rich in protein and fiber.
  • Plant Milk: Plant milk helps thin the omelette batter.
  • Vegetable Broth: Vegetable broth helps thin the batter like water, but adds flavor.
  • Nutrition Facts: Nutritional yeast provides vitamin B12 and tastes vegan cheesy!
  • Garlic Powder: Garlic powder is the dried and finely ground form of garlic.
  • Onion Powder: Onion powder is dehydrated, ground onion that is commonly used as a spice
  • Black Salt (Optional): black saltAlso known as Kala Namek or Himalayan Black Salt. The primary smell of black salt is savory, and the smell of harad seeds is sulphurous. Sulfur gives it an umami-like flavor similar to the yolk of a boiled egg. Pungent, sour and smoky, black salt imparts a rich, mineral flavor.

Not only do you need very few ingredients, but it only takes minutes to assemble the ingredients.

Omelet filling ingredients

Chop the red bell pepper, mushrooms, onion and zucchini in a bowl on the counter.

Because I love my veggies, I chopped up onions, mushrooms, red bell peppers, zucchini, and yellow summer squash. However, any vegetable works well in a vegan chickpea omelet. As usual, I used one of my favorite hot sauces.

Additional omelet filling ingredient suggestions

  • Jalapenos: If you like it spicy, add a few chopped jalapeños.
  • tomato: Chopped roma tomatoes taste amazing in chickpea omelette.
  • Vegan cheese: Add some vegan cheese of choice.
  • Vegan Nacho Cheese Sauce: My vegan nacho cheese sauce recipe is great drizzled over a chickpea omelet.
  • Green Chili: Opt for green chillies instead of red chillies. Baby bell peppers are also a great option.
  • Pico de Gallo: Pico de gallo is a great way to combine tomatoes, onions, and jalapeños.
  • Today: Herbs like basil, parsley, dill or rosemary add a lot of flavor to your favorite omelet.

How to make chickpea omelette

I sauteed the vegetables in a pan on the stove.

So, since this is my first chickpea omelette rodeo, I’ve learned a lot along the way. The first thing I discovered is that you must have a great non-stick pan. Otherwise the chickpea batter will stick to the pan.

Next, you have two choices when making an omelet. One way is to fry the vegetables first before cooking the omelet and then mix them into the batter.

Or, you can fold the vegetables and place them inside the folds. Both ways work perfectly well; However, this is a personal choice.

I am adding fried vegetables to gram batter.

Another helpful trick is to cook it low and slow. Because the batter is thin, slow and steady and wins the race.

If you plan to add vegan cheese, you should do so before flipping the side of the omelet.

When the omelette is browned, I flip both sides towards the middle to create an envelope. This tip, for example, keeps all your vegetables and other ingredients inside the omelette.

Chickpea Omelet Bata

  • In a large measuring cup or small bowl, add all ingredients.

  • Whisk the ingredients together until smooth.

  • Keep the chickpea omelette batter aside.

Roasted Vegetables

  • In a medium sized non-stick pan, saute the vegetables.

  • I use vegetable broth so the vegetables don’t stick.

  • It’s best to use a quality non-stick pan, or it will stick.

  • Heat the wok to medium-low before pouring the batter into the pan.

  • Mix the vegetables into the batter, cook the omelette and add before folding.

  • Loosen the omelette with a spatula and look at the bottom. When it starts to brown, you’re ready to add your vegetables (if you added them later.

  • To keep everything inside the omelette, I make an envelope and fold both sides in the middle.

  • If you are using vegan cheese, place the vegan cheese before folding the sides.

  • Add hot sauce and chopped parsley if desired. I love it hot!
