Bacon & Ranch Corn Dip Recipe (Quick & Easy!)

How this recipe came about

A long time ago, years ago, I had a really delicious one corn dip at the BBQ and got pretty embarrassed by how much I ate. I couldn’t stop. With every bite I kept wanting more and all I could think was, I HAVE to have the recipe. Well, not everyone likes to share their recipes, some even reject them. It was a sad moment. And I totally forgot about it until now, and I had to recreate it! So Bacon Corn Ranch Dip is in full swing and full of cheesy goodness.

What do I need for corn dip?

So let’s break it down, this cold corn dip features ranch, bacon and corn. In other words, there are three safe foods for picky eaters. Is it just me, or have you all noticed that even children and adults who refuse to eat anything seem fine with these three foods?

bacon It is obvious, Corn is so sweet and good – and even better when you grill it, but that’s not necessary – and ranch. I don’t know why ranch is a picky eater but it works! Here’s a full list of everything you need:

  • Corn – ideally you want fresh corn on the cob, but when it’s not corn season, frozen corn works great
  • Ranch Dressing – We prefer to make it from scratch or use a ranch packet rather than buying a bottle of ranch dressing
  • Sour Cream – You can double the ranch dressing if you don’t have sour cream and want extra ranch flavor
  • Shredded Cheese – we used cheddar and pepperjack for this recipe and you can use any combination of cheeses
  • Bell Peppers – You will be shredding and sautéing these to soften them up a bit and add great grilled flavor
  • Diced green chillies – drain well, they add great flavor and a little bit of spiciness
  • Spring onions – these add a nice pop of color and fresh flavor

How to make corn dip with bacon

This cheesy corn dip couldn’t be easier to make! Here are the basic steps to making this summer dip:

  1. Sauté the peppers until soft.
  2. Once the peppers have cooled, toss in the corn, ranch, sour cream, cheese, and chilies.
  3. Garnish the cold corn dip with scallions and crumbled bacon.

Tips for making cold corn dip

Feel free to use frozen corn or grilled corn that has been cut off the cob in this recipe. If using frozen corn, allow it to thaw to room temperature before mixing with the other ingredients.

If you can’t find ranch dressing where you live, you can easily make your own. We have a homemade ranch dressing recipe that we love!

For a spicier Corn dip, use hot green chillies rather than mild ones. You can also add chopped jalapenos to the dip.

Let the dip sit for at least 4 hours or overnight to allow the flavors to blend. Wait until just before serving to add the side dishes.

What do you eat with this dip?

I could honestly sit down with a bowl of this dip and eat it like pudding, but that’s not healthy or fair to everyone else at the party…haha! So, here are a few ideas on how to get that dip in your belly:

  • Ritz Crackers
  • Pretzel chips
  • Diluted Wheat
  • carrots
  • celery
  • Baguette – thinly sliced

How long does corn dip last?

It lasts about a week in the fridge, although it rarely lasts that long for us. Do not leave it at room temperature for more than 2 hours.

Can I make corn dip ahead of time?

Yes, but if you’re serving it to guests, I recommend eating it within the first 24 hours of making it. Also, it’s best if you wait to top the cheesy corn dip until just before serving.

The Best Bacon and Ranch Corn Dip Recipe! This dip only takes 15 minutes to make and is perfect for feeding a hungry crowd!

  • 1 tablespoon olive oil
  • 1 Cup paprika chopped (I use red and orange)
  • 3 cups Frozen Corn (or grilled and cut off the cob)
  • 1/2 Cup ranch dressing we prefer to make from the pack or from scratch
  • 1/2 Cup sour cream or double the ranch for extra ranch flavor and omit the sour cream
  • 1/2 Cup Grated Pepperjack Cheese
  • 1/2 Cup Shredded Mild Cheddar Cheese
  • 1 Can Diced green chillies 4 ounces, drained
  • salt and pepper taste good
  • Green Onions for garnish
  • 4 slices bacon boiled and chopped
  • Heat a large skillet over medium-high heat and add a small drizzle of olive oil. Add the peppers and sauté until soft. Remove from stove to cool.

    1 tablespoon olive oil, 1 cup of peppers

  • In a large bowl, mix together corn, ranch, sour cream, cheese, sautéed peppers, and chilies.

    3 cups frozen corn, 1/2 cup ranch dressing, 1/2 cup sour cream, 1/2 cup grated pepperjack cheese, 1/2 cup grated mild cheddar cheese, 1 can of diced green chillies

  • Season with salt and pepper (it needs a few pinches of salt with all that corn and dressing).

  • Top with spring onions and bacon.
