Vegan Chocolate Mousse with Aquafaba

You only need 3 ingredients for this vegan chocolate mousse with aquafaba. This is the perfect no-bake dessert for Valentine’s Day!

Vegan Chocolate Mousse

I love a good chocolate mousse. But store bought mousse is $$ and not healthy either. The funny thing is that you can make amazing vegan chocolate mousse with an ingredient you’d normally throw out: chickpea water (aka aquafaba!).

What I love about this fancy mousse or chocolate is

  • it is Reduce food waste (Finally a good recipe to use aquafaba!)
  • It is only necessary 3 ingredients (Chocolate, aquafaba, guar gum – I’ve included options below)
  • it is It doesn’t take long to do: Melt chocolate (5 minutes), aquafaba (7 minutes), fold it in and scoop into cups (5 minutes) – so 17-20 minutes total. Then you need to refrigerate it for 8 hours or overnight.
  • This is because it is easy to prepare ahead Keeps refrigerated for up to 3 days.
  • it is healthy than store-bought mousse (mine doesn’t have added sugar, either).

What is Aquafaba?

Aquafaba is the fancy word for the liquid in which chickpeas are canned. You’ve probably thrown it down the drain many times. But it’s actually a really useful ingredient because you can whip it up and make it into mousse, ice cream or even macarons (although that hasn’t worked for me yet).

The next time you open a can of chickpeas, save the liquid. You can pour it into a jar and refrigerate until you are ready to use it.

How to Make Vegan Chocolate Mousse with Aquafaba

Components and possible replacements

You will need:

  • Aquafaba (chickpea water)
  • Vegan Chocolate – I used 45% baking chocolate. If you want to use dark chocolate, you may want to add 1-2 tablespoons of powdered sugar (this goes together with the guar gum when whipping up the aquafaba) to make it sweeter.
  • Guar gum powder, not very important but helps keep the aquafaba firm; Alternatives: cream of tartar or locust bean gum

  • In a double boiler, melt the chocolate. Then keep it aside and let it cool.

  • Beat the aquafaba (using a stand mixer or electric hand mixer) until it reaches stiff peaks. Add guar gum and beat further. It should take about 7 minutes. This is the most important step, don’t rush it.

  • Whisk in the aquafaba and carefully add the cold-melted chocolate fold (don’t mix) in it. Aquafaba will shrink in size, this is normal.

  • Divide the chocolate mousse into jars (this works best with an ice cream scoop). Then refrigerate them for at least 8 hours or overnight.

  • Then ready to serve. You can add shaved chocolate, whipped cream, fruit or almond butter on top!

*Guar Gum Substitute: Locust Bean Powder (1/2 tsp), Cream of Tartar (1/2 tsp)

  • Whisk the aquafaba long enough. It should have stiff peaks. It will take at least 7 minutes.
