Native to Southeast Asia, durian is a large, thorn-covered fruit with a soft, yellow flesh. They are used in sweets, desserts, baked goods and savory dishes throughout Indonesia, Malaysia and Thailand.
Durians are known for their strong smell, but once you bite into their creamy flesh, you won’t be able to stop eating them. They’re rich, sweet, and flavorful—so good!
Durian tastes like a very ripe banana but with hints of almonds, chives and cream cheese. When fully ripe, the pulp has the consistency of pudding and feels like eating cheesecake. Truly unique!
When we tried the fruit in Thailand, we were initially put off by the smell, but then it was love at first bite!
In fact, we liked durian so much that we decided to use it to add a delicious tropical twist to our beloved oatmeal cookies.
But you may be wondering how do you use durian in cookies?
It’s super easy: remove the seeds and puree the durian meat in a food processor with some coconut milk. Then add that creamy durian puree to the oatmeal cookie dough ingredients and you’re done!
Because durian puree looks like mashed bananas or buttercream, it’s perfect for making healthy vegan cookies without butter or eggs.
The mush perfectly holds the oatmeal together and adds moisture, flavor and natural sweetness to the cookie dough.
