This Jackfruit Bread is a spongy loafcake with a wonderful tropical flavor. It’s a fun twist on the famous banana bread made with sweet and ripe yellow jackfruit. And it’s completely vegan. Let’s do it together!

Ripe jackfruit pods are bright yellow, juicy, fleshy, and sweet. They’re perfect for making exotic smoothies, desserts, and casseroles like this jackfruit cake.
Jackfruit tastes like a wonderful cross between three delicious tropical fruits: mangoes, bananas and pineapple. It’s really unique and so good!
To use yellow jackfruit in this pound cake, you must first soften the fruit.
Because the pulp is quite “meaty,” you can’t just mash it up and add it to the cake batter like you would for banana bread.
Instead, you need to simmer the jackfruit in some water before pureeing it until smooth. This is pretty much like making jam!

When you have your jackfruit puree ready, mix it with the other cake ingredients, pour the batter into a loaf pan and bake the bread. Simply!

Since jackfruit puree is naturally thick and sweet, we left out the eggs and used very little sugar.
We also replaced milk with canned coconut milk and butter with vegetable oil to make this fruit bread dairy-free and vegan.
