Rotel Dip – Spend pennies with it

This easy cheese dip only requires 4 ingredients and a few minutes to make.

Rotel Dip is a quick party favorite made with ground beef, rotel tomatoes, and a creamy cheese base!

Prepare it and keep it warm in a slow cooker. Serve with a pile of tortilla chips for a great game day spread.

This rotel dip recipe, aka ugly dip, is a game day favorite that’s made with just a few ingredients. Similar to queso dip, this recipe is a quick and easy snack.

  • Rotel tomatoes: A can of Rotel tomatoes adds a lot of flavor and a little bit of spiciness. Any type of salsa can be substituted for rotel.
  • Meat: We love ground beef in this recipe, but swap it out for ground turkey or sausage.
  • Cheese: Velveeta makes this dip quick and easy (and super creamy). Cream cheese with a little cheddar is a great substitute.
  • Spices: I add a pinch of chilli powder. You can also add taco seasoning or your favorite seasonings to the meat if you like, or use leftover taco ground beef.

How to make rotel dip

This Rotel Cheese Dip Recipe is as easy as 1,2,3!

  1. Sear the meat and drain on the stove.
  2. Add rotel tomatoes and cheese to same pan.
  3. Stir until melted.

Don’t let the Rotel off, as the juices ensure the right consistency. We sometimes add two cans of Rotel! Of course, as with most recipes, you can add your own favorites or change up the flavors/additives depending on what you have on hand.

Tips & Variations

  • Sear the meat and drain excess fat or use lean hamburger meat.
  • If you would make it perfect Skip the Velveeta cheeseuse 8 ounces cream cheese and 1 cup cheddar cheese on the spot.
  • This recipe can be thinned with a little milk if you want a thinner consistency.
  • Serve with tortilla chips, crackers or celery, carrots, and other veggies for dipping.
  • Keep the rotel dip Heat in a small slow cooker. When the Rotel dip cools it becomes difficult to spoon, so it can be reheated on the stovetop or in the microwave until dipable again!
  • Leftovers are great in a quesadilla, over potatoes, or as an addition to tacos.

What are Rotel tomatoes?

Ro-tel tomatoes are a brand of diced tomatoes with green chilies. They add a bit of spiciness to dishes and have a salsa-like flavor and can be found in the canned tomato section of most grocery stores. They add great flavor to chili recipes, stews, taco soups and more.

Can I make Rotel Dip without Rotel?

If you I don’t have rotel tomatoes On the other hand, you can substitute green chilies or salsa for tomatoes from another brand. Although the flavor won’t be exactly the same, the dip will still taste delicious.

How to dip Rotel in the CrockPot

This dip is easy to prepare in the slow cooker. Simply sear the ground beef or sausage as instructed and drain and drain. Combine all ingredients in mini saucepan/slow cooker and set on low, stirring occasionally, for 2-3 hours until melted. Once melted, turn the slow cooker to warm.

  • In a large skillet, cook the ground beef or sausage over medium-high heat until no pink remains. Drain excess fat.

  • Reduce the heat to medium.

  • Add processed cheese, rotel tomatoes with juice, and chilli powder.

  • Stir the mixture until the cheese is melted and the dip is smooth.

  • Serve warm with tortilla chips.

Salsa can be substituted for rotel if desired.
Cream cheese can be substituted for Velveeta cheese. Substitute an 8-ounce package of cream cheese for the processed cheese and add about 1 cup of the sharp cheddar cheese.
To make this dip thicker, reduce the processed cheese to 8 ounces. Optional additions include diced jalapenos, sharp cheddar cheese, or taco seasoning.
Keep this dip warm in a small slow cooker. The dip will thicken as it cools, but can be reheated. To keep it dipable longer, add up to 1/3 cup of milk while it’s cooking.
