What kind of tofu should I use?

Make sure you use firm tofu for this recipe and not silken tofu.

Firm tofu is harder and drier and won’t fall apart when stirred.

Firm tofu itself can come in a variety of types: medium firm, firm, or extra firm—so check the packaging when you buy it.

We used medium firm tofu as we like the tofu bits a little softer and spongy. But if you like it firmer and crunchier, opt for extra firm tofu instead.

Before you dice it, you can optionally place the tofu block between two cutting boards lined with kitchen paper and press down to squeeze out more moisture.

This step will make the tofu drier so that it will have a firmer consistency after cooking.

What kind of honey is best for this Asian tofu glaze?

Since this glazed tofu recipe is all about the honey sauce, we recommend using a highly flavored type of honey for added flavor.

So try swapping out the usual mild acacia honey for more flavorful honeys. Here are a few ideas:

  • Chestnut Honey – dark and nutty;

  • Buckwheat honey – molasses-like color and strong flavor;

  • Orange Blossom Honey – citrus notes;

  • Eucalyptus Honey – fresh, mentholated and herbal;

  • Or maple syrup if you’re looking for a vegan option.

When we made the recipe in Thailand, we used a local honey made from logan fruit blossoms. It’s very floral, sweet, and herbal—much like eucalyptus honey!

Also, try to use raw, unfiltered honey when you can, as it contains more nutrients and beneficial compounds than conventionally processed honey.

Which hot chilies can I use?

Fiery red Thai chilies are the go-to choice for this sweet and tangy glaze.

Thai chilies, also known as bird’s-eye chilies, are very hot, thin red chilies commonly used in Asian hot sauces.

You should be able to find them at large supermarkets or your local Asian grocery store.

If you can’t get hold of Thai chilies, you can opt for red jalapenos (which are used to make the famous Sriracha hot sauce).

If Thai chillies are too hot for you, you can scrape off the seeds before use or add them whole.

Dried red chillies or chilli flakes are an alternative to fresh red chillies. Replace each red Thai chilli with semi-dried chili or 1/2 teaspoon of chili flakes.

Can you bake this honey glazed tofu?

In the recipe, we fry the honey tofu bites in a hot wok, but you can also bake them in the oven if you prefer.

To do this, follow the same steps as this Baked Miso Marinated Tofu recipe, but omit the water from the sauce ingredients or the glaze will be too watery.
