Vegan Schnitzel – A veganized version of the classic Wiener Schnitzel. Textured vegetable protein is the perfect base for our skintzels as it has a wonderful meat-like texture.

As an Austrian, schnitzel was part of my childhood. I had phases where I practically stopped doing those things. So, when I became vegetarian I was looking for something that could be my traditional skintzel equivalent. And I found this as the base for vegan schnitzel using TVP slices.
I usually make a big batch of these mini-schnitzels and use half of them immediately (they taste bland – reminds me more of chicken) and the other half cold on burgers or on cold plates (they’ll have a more pork-like texture). . So if you want this too, make sure you double the recipe.

Base: TVP

This is TVP (Textured Vegetable Protein) – the base product we are working with for this recipe. I really like this stuff as a meat substitute, because the texture is like meat and you can store it for months.
I have written a complete guide about TVP (what it is and how to use it). Of course, check it out if you want to learn more about it, and I’ve also included my favorite recipes using TVP in that guide.
Options: If you can’t get your hands on TVP slices, this Seitan Schnitzel (with Housemade Seitan) or this Vegan Kohlrabi Schnitzel are great alternatives!
How to Make Vegan Schnitzel

You only need a few ingredients to make this vegan skin gel:
- TVP slice
- frying oil
- For egg replacement:

- the water
- black salt (or regular salt)
- Sriracha Sauce (optional)
- For the bread:

- Sesame seeds (optional)
- Spices (I use chicken seasoning consisting of salt, paprika powder, garlic powder and onion powder)
- dried rosemary (optional)

My favorite side dish for schnitzel is rice with peas and oven baked potato wedges.

How to get dough without eggs
It is not difficult at all to eat TVP or any other meat substitute, tofu, vegetables etc. without eggs.
For the egg substitute, I mix all-purpose wheat flour (alternatively chickpea flour works too), water, salt, and Sriracha (optional) until it reaches an egg-like consistency.
You can check the proportions detailed below in the recipe. If the egg replacer is too thick, you can always add more water. If it is too thin, add more flour.
Then dip cooked TVP slices or whatever breading you want in the egg substitute before coating it in panko flakes or breadcrumbs.
Works like a charm! No one needs eggs for this (or anything for that matter) 🙂

Vegan Schnitzel
Vegan Schnitzel Recipe Made with TVP (Textured Vegetable Protein). It’s delicious and tastes just like the real deal!
Ingredients for egg replacement
Ingredients for making bread
-
Heat water in a large pan or pot and when it boils, toss in the TVP slices. When the TVP slices are soft, drain them and gently squeeze the water out of them (this works best with a slotted spoon).
-
In a bowl, whisk together the ingredients for the ‘egg’ substitute (it should have an egg-like consistency, add more water or flour if necessary). In another bowl, combine the ingredients for the bread.
-
Place the TVP slices one at a time in the egg substitute mixture first, then in the breadcrumbs.
-
Heat a large pan with frying oil (enough to coat the bottom of the pan) over medium to high heat. Place the breaded TVP slices in the oil and fry until golden brown, then flip them over and fry the other side as well.
-
When they become golden and crispy on both sides, they are ready to serve! They are delicious with rice and peas and oven baked potato wedges.
*If you don’t have chicken seasoning, use 1/2 teaspoon salt, 1/4 teaspoon paprika powder, 1/8 teaspoon garlic powder, 1/8 teaspoon onion powder, 1/8 teaspoon pepper.
