We had to travel to Southeast Asia to try baked beans for the first time. We were very lucky and found many plant-based breakfast dishes while traveling and tried vegan baked goods at one of our hotels. It was served as part of a traditional English breakfast with sausages, bread, mushrooms, tomatoes and scrambled eggs. The sausages and scrambled eggs weren’t plant-based, but thankfully the rest were vegan.
Making vegan baked beans is very easy. Since I can’t get vegan worcestershire sauce here in Spain, I used tamari or soy sauce. Some versions add bacon and some don’t, but since I’m a tempeh lover, I decided to include it in my recipe. If you prefer a simpler version, skip it.
I didn’t bake my beans, I just stewed them in tomato sauce. Although dried beans are traditionally used to make this recipe, I find that canned beans are very convenient, but it’s up to you. I also used cannellini beans as I had some in my pantry, but navy beans or any other kind of beans are fine.

Vegan Baked Beans

Ingredients
For the bacon tempeh (optional):

Instructions

To make the tempeh bacon, add all the ingredients to a bowl, stir and let it sit for 1-2 minutes. Next, cook the bacon in a pan with a little water or oil over medium-high heat until golden brown. Aside.

Cook the garlic and onion in a pan with a little water or oil over medium-high heat and when they begin to brown, add the syrup, tamari or soy sauce, pepper and mashed tomato and let it cook for another 5 minutes.

Add the bacon and beans and cook for 5 to 10 minutes or until the sauce thickens slightly.

Keep leftovers in an airtight container in the refrigerator for 4 to 5 days. If the sauce is too thick, add a little water or tomato puree before reheating the beans in the oven.
notes
- The tempeh bacon is totally optional and you can also make our eggplant bacon.
- Feel free to add any other sweetener. If you are using a non-liquid sweetener to make the bacon, add a little water or oil.
