Traditionally ceviche is made with raw fish marinated in lime or lemon juice which cooks the fish. Of course, as a vegetarian, I don’t eat fish, but that doesn’t mean we can’t enjoy these fresh flavors. Hearts of date are available canned at most grocery stores and I love how shiny and tender they are. They make an amazing seafood substitute which is why I also use vegan lobster and vegan calamari in my recipes!

Note: If you’re concerned about the shelf life of date hearts, rest assured that, unlike some palm oils, most canned varieties of this vegetable come from cultivated peach dates. only check Be sure with the brand you are purchasing.

Common Questions:

What is vegan ceviche made of? Hearts of palm, nori (for a fishy flavor), lots of lime juice, avocado, cherry tomatoes, red onion, cilantro, jalapeño, salt and pepper.

How long does vegan ceviche last? The wonderful news is that since no raw fish is used, vegan ceviche stores well and stays fresh (and safe to eat) for much longer. Store premade ceviche in an airtight container in the refrigerator for up to 3 days.

How to make the best vegan ceviche:

Drain and cut the hearts of dates into ½-pieces.

Add the palm, nori (if using), juice of 3 limes, avocado, cherry tomatoes, red onion, cilantro, jalapeño to taste, salt and pepper to a large bowl and mix gently. Taste, and add more lime juice if desired. Serve fresh with tortilla chips. This ceviche can also be made ahead of time, just store in an airtight container in the fridge for up to 3 days.

Nori: Nori is a seaweed that you use to make sushi, it adds a fishy flavor. You can omit it for a milder flavor if you like. Cut the nori into fine flakes, I find it easiest to do this with kitchen scissors.
