February is here! If you’ve bookmarked any hearty soups and stews you haven’t tried yet, this is the month to make them. In just four weeks, March and glimpses of spring will welcome us. This Butternut Squash Mac and Cheese has been our go-to dinner lately, and I’m so glad to hear your reaction to it!
It has been bitterly cold here in Kansas City. We’re planning a trip to Maui to warm up—any suggestions on where to eat or what to do with the kids?
Here are more seasonal recipes to enjoy this month with winter produce. I have more recipes photographed and almost ready to share with you, so stay tuned.

Mexican green salad with jalapeño-cilantro dressing
Gluten free and easily vegan
“This Mexican salad is absolutely delicious! The dressing is to die for. Even my 26 year old son who is not a big salad eater really enjoyed it and even took some home with him. He especially liked the dressing. I made two cups of cooked quinoa. Added to make it a little more filling as well as using some fresh corn. I’ve been eating this all week for lunch and it’s just perfect. I’d rather use a large jalapeño but remove the seeds etc and the dressing is not too spicy but has some There is a kick.” – Anika

Avocado salad with blood orange, fennel and lemon citronade
Gluten free and easily vegan
“I take back what I said about Maury! I braised a bulb with some carrots the other day, and one bulb has been sitting sadly in my crisper drawer. A stray blood orange was living in the bottom drawer and I needed to use up some salad greens. It was wonderful, and hubby especially loved it. We served it with some nice grilled chicken. I am thrilled to now welcome Maury to my repertoire. Looking forward to your cookbook!” – Debra

Ultra Crispy Baked Potato Wedges
Gluten free and vegan
“Kate! These crispy baked potato wedges are the new food love in my life! Seriously! These are better than any deep fried french fries or oven baked fries I’ve ever had. Soaking the potatoes in hot water is the secret of all secrets to achieving the perfect crispness on the outside and soft inside…just what everyone wants in french fries. I used avocado oil, which has a high smoke point and they were to die for! Thanks for all your wonderful recipes. Love your blog :)” – Suzette

Colorful veggie lettuce wraps
Gluten free and vegetarian
“Yum!! I was a little skeptical at first but will definitely make it again…probably more often. Lots of chopping involved, but I enjoy it. Based on our taste preferences, I skipped the hummus and planned to use smashed avocado instead but Forgot and went with lettuce, soba and pickled vegetables and it turned out great!” – Erin
