I’ve compiled a list of five of my favorite summertime BBQ recipes for you to enjoy this weekend, no matter WHAT diet people at your table are subscribed to. These are also budget-friendly recipes that you can put together relatively quickly so you can spend more time enjoying the rest and relaxation we all need this weekend!
This is a #TexasStrong burger for the meat eaters in the crowd. Overall, this recipe only takes about 15 minutes, which makes it ideal if you’ve got a few mouths to feed this weekend. I use bison meat but you can substitute any protein you prefer. Fire up the grill (or non-stick skillet) and get ready for some TexMex goodness!
I just can’t get enough of this because when done right, I promise you can fool almost anyone into believing they eat meat. Jackfruit works so well to mimic the texture of pulled pork! You should get this one going in your slow cooker in the morning and I promise it will be worth the wait. A vegan twist on a summer classic that everyone will enjoy!
If you or someone you cook for is on the keto diet and you’re sick of burgers on “buns” that aren’t buns at all, I have an idea: switch it up! A grill is a great spot for seafood, and these bacon-wrapped scallops are packed with flavor and the healthy fats and proteins that the ketogenic diet prioritizes. Even if you’re not keto, these are a great option if you’re looking to make a change this weekend. Or if you want to whip up a tasty snack to keep everyone hooked between meals.
This is a meal prep recipe, but it can be easily turned into a family/guest meal this weekend. Plus, it’s absolutely delicious that you will NOT want to sleep on it. This is easily one of my favorite recipes from my cookbook, not only because it’s suitable for the Mediterranean diet, which is my top diet, but because it’s absolutely bursting with flavor! Turkey, feta and olives combine to create a delicious and JUICY patty that you can serve with pita or on a bun.
I loved how these salmon patties turned out and I promise you will too. Salmon and avocado are both high in healthy fats, including omega-3s and 6s, and using grilled portabello mushrooms instead of burger buns can keep them gluten-free for those who are sensitive. It’s a flavorful option that you can adjust to your liking by adjusting the spices up or down as you see fit.
