Congee is a porridge, traditionally made from rice. Just like oats or rice pudding, except the congee is slow cooked with five or more times the volume of water. This allows the beans to fully cook with plenty of moisture to spare.
Healing congees have been prescribed for centuries and are part of traditional Chinese medicine and Asian dietary therapy.
Why eat congee?

Why congee for breakfast?

How to make congee help digestion?
In Chinese medicine, hot foods increase the Qi and Yang of the Spleen and feed the fires of digestion. When Spleen Qi and Yang are strong, fluids are regulated and digestion, elimination and metabolism are optimized.
Congee calms the mind and body, amplifying the other positive effects.
Why does congee work when nothing else does?
Warm, well-cooked, hydrating foods are easy to digest, they generate energy and are soothing to the stomach and intestines.
Foods that are easy to digest and absorb provide the nutrients you need without all the effort. The net effect is an overall increase in energy and metabolism.
Cooking congee in plenty of water makes it an exceptionally hydrating meal. Good hydration reduces inflammation and lubricates all cells, muscles and organs keeping them flexible and energized.
