When I tell you this syrup tastes like Christmas in a cup…well…it really does taste like Christmas in a cup! Sweet, caramel flavor, infused with warming cinnamon spice, use it to make a cinnamon dolce latte, or stir it into a simple coffee for a magical way to start your day.
The process of making this Dolce Syrup recipe is very simple, just like making normal syrup, you boil sugar and water. To make this cinnamon syrup I add two cinnamon sticks to water and sugar while it’s simmering and I also use some brown sugar for a rich caramel flavor.
Where else can you use this Homemade Cinnamon Dolls Syrup?
While I like it in my coffee you can also:
- Add to hot tea
- Make an iced cinnamon dolce latte
- Stir it into plant-based milk for a sweet, creamy drink
- Drizzle over vegan vanilla ice cream
- Add it to a cocktail (it pairs beautifully with bourbon or rum).
How can I gift it?
The syrup keeps very well so you can easily make it ahead of time, pour it into sterilized bottles or jars, tie a little bow around the jar and add a label, then give it to a lucky loved one. It’s very affordable to make and makes a great gift on its own, or it’s a nice addition to a gift basket. I like to leave the cinnamon sticks in the syrup which not only looks pretty, but means the cinnamon stays in the mix and makes the syrup even more delicious!
How to make Cinnamon Dolce Coffee Syrup:
Add water, white sugar, brown sugar and cinnamon stick to a small saucepan. Bring to a gentle boil over medium heat and cook for 10 minutes without stirring. Remove from heat then stir in vanilla extract. Allow the syrup to cool then transfer the syrup to a sealable bottle or jar to store. I like to put the cinnamon stick in the jar with the syrup because the cinnamon flavor will continue to permeate the syrup the longer it sits. It’s also beautiful to look at! The syrup can be stored at room temperature or refrigerated for up to 6 months.

Can I use ground cinnamon? I like to use cinnamon sticks so the syrup is smooth and not gritty. If you prefer to use ground cinnamon, replace two sticks with 1 teaspoon cinnamon. You may want to strain the cold syrup through cheesecloth to remove any grit.
